Spinach Omelette

Ingredients

  • 1 cup spinach, boiled and chopped fine
  • 2 pcs. potatoes, peeled
  • 4 slices bacon
  • 6 eggs, beaten
  • salt, pepper, vetsin to taste
  • parsley for garnishing
  • butter for sauteeing

Instructions

  1. Cut potatoes thinly and cut into quarter shape. Fry potatoes in butter. Season with salt and pepper. Set aside. Cut bacon into pieces and fry intil crisp. Beat eggs well and add spinach, bacon and potatoes. Season to taste. Heat butter in frying pan and pour egg mixture. Cook until done. Invert and roll tightly with plastic sheet. Chill. Slice into thin slices when ready to serve. Garnish with parsley.
