Sopa De Mariscos

Ingredients

  • 1/4 cup butter
  • 1/2 cup onions, chopped
  • 1/2 cup celery, chopped
  • 1/2 cup red bell pepper, chopped
  • 1/2 cup green bell pepper, chopped
  • 1 cup squid rings
  • 1 cup shrimps, shelled
  • 1 cup mussels or clams, cooked & removed from shells
  • (184 gms) tuna chunks in oil, drained
  • 4 tbsps white wine
  • 1/2 cup tomato paste
  • 3 cups mussels or clam broth
  • 1 cup thick cream
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions

  1. Melt butter in a heavy saucepan, saute onions, celery and bell peppers until soft. Gradually add one at a time, squid, shrimps, mussels and tuna. Add white wine. Stir in tomato paste and broth. Allow to boil. Lastly, stir in cream, salt and pepper. Makes 8 servings.
