Ingredients
- ½ k. Monterey ground beef
- ½ k. Monterey ground pork
- 1/3 cup onions, chopped
- 1/3 cup pickle relish
- 2-½ tsps. salt
- 3/4 tsp. pepper
- 2 tbsps. Soy sauce
- 3/4 cup Magnolia fresh milk
- 1 cup bread (tasty/pan Americano), torn into bits then soaked in milk to soften
- 1 (250 gm.) package Purefoods Lean & Mean Bacon
- For the gravy:
- ¼ cup Magnolia Gold Butter
- ¼ cup all-purpose flour
- 1 pc. beef bouillon cube
- 1 tbsp. soy sauce
- 2 cups Magnolia full cream milk
- For the salad:
- lettuce greens, washed & dried
- 1 pc. cucumber, sliced
- 1 pc. apple, cored & sliced into wedges
- 1 large can whole corn kernel, drained
- Magnolia Cheddar Cheese, grated for topping
- For the mango dressing:
- 2 cups ripe mango, cut into cubes
- ½ cup mayonnaise
- 1 clove garlic, chopped
- ¼ tsp. salt
- ¼ tsp. cayenned pepper
Instructions
- Preheat oven at 350ºF or 175ºC.
- combine the ground beef, ground pork, onions, pickle relish, salt, pepper, soy sauce, cheese, egg, milk and bread.
- Mix well with hands covered in plastic disposable gloves.
- Prepare 6-8 empty cans of Purefoods Corned Beef.
- Remove lids (top and bottom) peel labels and wash well.
- Or use round glass ramekins.
- Put 2 pieces of bacon on sides of can/ ramekin cups.
- Stuff with meat topping.
- Pack well.
- Place on baking trays lined with Glad aluminum foil.
- Bake in oven for 40 to 45 minutes or bake in an oven toaster at 800 watts for 35 to 40 minutes or in a turbo broiler at 300ºF for 40 to 45 minutes.
- Prepare a clean tray for cooked “timbales.”
- When cooked, loosen sides of timbales with a knife or metal spatula.
- Be careful as tin molds can get very hot.
- Invert on a serving dish.
- Serve with gravy, salad greens with mango dressing on the side.
- To make gravy, reserve drippings from timbales.
- Melt butter in a pan.
- Add flour and cook for 1 minute to make a roux.
- Add beef cube, soy sauce and milk.
- Lastly, add drippings.
- Cook until thick, stirring with a wire whisk.
- To make mango dressing, put all the ingredients in a blender or a food processor.
- Mix well.
- Prepare the salad by arranging the lettuce leaves on the side of the platter or serving dish. Toss the rest of the vegetables and fruits.
- Drizzle mango dressing on top and sprinkle with grated cheese if desired.
