Fruity Coleslaw

Ingredients

  • 1 head cabbage, shredded
  • 1/4 cup sugar
  • 1 tablespoon lemon or kalamansi juice
  • 1-2 cups mayonnaise
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup grated carrots
  • 4 pieces hotdog, boiled and diced
  • 1 cup cubed cheddar cheese
  • 1/2 cup pineapple tidbits
  • 1/2 cup raisins (optional)

Instructions

  1. Place shredded cabbage in a large salad bowl.
  2. Wash and drain.
  3. Sprinkle sugar and toos just until mixed.
  4. Cover and chill for 30 minutes.
  5. Combine lemon or kalamansi juice and mayonnaise in a small bowl.
  6. Set aside.
  7. Remove cabbage from the refrigerator.
  8. Season with salt and pepper.
  9. Add carrots, hotdog, cheese and pinapple tidbits.
  10. Toss with mayonnaise.
  11. Chill before serving.
  12. Top with raisins, if desired.
