Flavoured Tuna and Noodle Wraps

Ingredients

  • 180 gms. Good Life Vermecelli Noodles
  • 4 (184 gms.) cans Century Tuna Chunks Spanish Style, drained
  • 3 eggwhites
  • 2 tbsps. Cream Cornstarch
  • 1 tsp. iodized salt
  • For the sauce:
  • 1 tbsp. yellow salted bean paste
  • 3 tbsps. Good Life Sesame Oil
  • 2 tbsps. Good Life Hoisin Sauce
  • 2 tbsps. Good Life Oyster Sauce
  • 2 tbsps. white sugar
  • 1 tbsp. white wine
  • dash of Good Life Fish Sauce
  • 4 cloves garlic, chopped
  • 2 tsps. toasted sesame seeds
  • ½ pc. beef cube, dissolved in
  • 1 cup hot water
  • ¼ cup leeks, diagonally sliced
  • 2 tsps. dried chili flakes
  • Good Life Sesame Oil to drizzle
  • 2 tbsps. roasted cashew
  • 6 large pita bread
  • spring onions for frying

Instructions

  1. Soak vermicellin in water, when soft, drain and cut.
  2. Set aside.
  3. Whisk together eggwhite, cornstarch, and salt.
  4. Add tuna and stir until tuna is well coated.
  5. Spoon into hot oil.
  6. Deep fry until crisp.
  7. Place on paper towel to absorb excess oil.
  8. Set aside.
  9. In a separate bowl, mash yellow beans.
  10. Blend with sesame oil, hoisin sauce, oyster sauce, sugar, white wine, fish sauce, garlic and sesame seeds.
  11. Set aside.
  12. Heat oil in pan.
  13. Fry the dried chili.
  14. Add carrots and leeks.
  15. Saute until fragrant.
  16. Remove from heat and set aside.
  17. In the same pan, pour stock and yellow bean mixture.
  18. Allow to boil and season according to taste.
  19. Add noodles and cook until done.
  20. Toss in fried tuna, carrots, leeks and crushed cashew.
  21. Drizzle with sesame oil before removing from heat.
  22. Fill into pita bread and tie with spring onions.
