Fiesta Pancit Luglug

Ingredients

  • 425gms. WHITE KING FIESTA SPAGHETTI
  • 1/4 cup cooking oil
  • 1 head garlic, peeled and minced
  • 1/2 cup pork, cooked and diced
  • 1/2 cup shrimps, cooked and shelled (reserve broth)
  • 1/2 cup soy bean cake (tokwa), optional
  • 1/2 cup shrimp broth
  • 2 packs WHITE KING PANCIT PALABOK MIX
  • (Shrimp Sauce Mix)
  • 1/2 cup cooking oil
  • 4 cups water
  • 1/3 cup smoked fish (tinapa), flaked finely
  • 1/2 cup chicharon, crushed finely
  • 2 hard-cooked eggs, sliced lengthwise
  • 1/3 cup spring onions, chopped
  • calamansi
  • fish sauce (patis)

Instructions

  1. Cook spaghetti according to package directions; set aside.
  2. In a medium frying pan, heat cooking oil and sauté garlic until brown; set aside.
  3. In the same pan, fry pork until brown; add shrimp and tokwa; then add shrimp broth; remove from flame then set aside.
  4. Pour contents of 2 packs Palabok Mix into a pan. Add ˝ cup cooking oil and 4 cups water; boil stirring constantly until thickened.
  5. Arrange cooked spaghetti in a platter; pour shrimp sauce over the cooked noodles. Garnish with pork, tokwa, shrimps, flaked tinapa, chicharon, and slices of hard-cooked eggs. Sprinkle with spring onions and toasted garlic.
  6. Serve with calamansi and patis.
