Fiesta Mac and Ham Pasta Salad

Ingredients

  • 1 ( 400 gms.) Fiesta Elbow Macaroni
  • ½ cup mayonnaise
  • ½ cup sour cream
  • 2 tbsps. cider vinegar
  • 1-½ tbsp. prepare Dijon-style mustard
  • 1 tsp. white sugar
  • ½ tsp. black pepper, ground
  • ¼ tsp. dried dill weed
  • ¼ tsp. salt
  • 2 cups seedless green grapes, halved
  • 2 cups Swift Pearshape Ham, diced
  • ½ cup green onions, chopped
  • 1-½ cups sharp cheddar cheese, diced

Instructions

  1. Cook White King Fiesta Elbow Macaroni according to package directions; drain well and set aside.
  2. In a small bowl, mix together mayonnaise, sour cream, cider vinegar, mustard, sugar, black pepper, dill weed and salt.
  3. In a large bowl, combine pasta, grapes, ham, green onions, and cheese.
  4. Toss with dressing.
  5. Cover and chill overnight for at least 6 hours.
  6. In individual salad plates, lined with greens, put a mound of salad mixture, sprinkle with Parmesan cheese on top.
