Ingredients
- 400 gms. Fiesta spaghetti
- 500 gms. fresh and squid (calamari), cleaned thoroughly
- 2 (250 gms.) packs Fiesta spaghetti sauce
- 1 cup red wine
- 2 tbsps. fresh lemon juice
- 1 tbsp. olive oil
- 2 tsps. garlic, chopped
- 1 tsp. black pepper, ground
- ½ tsp. cayenne pepper, ground
- 2 tsps. dried basil
- 1/3 cup romano cheese, grated
Instructions
- Prepare Fiesta Spaghetti according to package directions; set aside.
- Separate the tentacles from the long body of the calamari.
- Slice the body or calamari tubes into rings about ½” -thick, set aside.
- In a saucepan, combine Fiesta Spaghetti Sauce, red wine, lemon juice, olive oil, garlic, black pepper, cayenne pepper, basil and cheese.
- Cover and simmer on medium low for about 30 minutes to give the alcohol in the wine time to evaporate and all the flavors to blend.
- Add the calamari and tentacles to the sauce.
- Continue to slowly simmer for about another 10 minutes, stirring occasionally.
- Calamari is done when it is plump and more opaque.
- Do not cook over high heat or for a longer period, as calamari easily gets rubbery.
- Arrange the cooked pasta on serving platter and top with prepared sauce.
- Garnish with basil.
