Eggplant Relleno

Ingredients

  • 2 medium-sized eggplants
  • salt and pepper
  • 3 tablespoons oil
  • 2 cloves garlic, crushed
  • 1 small onion, chopped
  • 1 tomato, chopped
  • 1/4 kilo ground pork
  • 2 eggs
  • all purpose flour or breadcrumbs
  • oil for frying

Instructions

  1. Broil eggplants then peel.
  2. Season with salt and pepper.
  3. Set aside.
  4. In a skillet, heat oil and saute garlic, onions and tomatoes.
  5. Add ground pork and cook until brown.
  6. Season to taste.
  7. Add one egg and blend well.
  8. Dived the mixture into 2 and spread over eggplants.
  9. Coat with more beaten egg then dredge with flour or breadcrumbs.
  10. Fry until set and golden brown.
