<li class="ingredient">2 to 4 day-old pan de sal (depending on how large they are), cut into small pieces, or 2 c. of cold cooked rice</li>
<li class="ingredient">4 fresh button mushrooms, finely sliced</li>
<li class="ingredient">a generous bunch of spinach, blanched for 5 minutes in boiling water, drained and excess water squeezed out, then finely sliced</li>
<li class="ingredient">1 onion, finely sliced</li>
<li class="ingredient">4 eggs</li>
<li class="ingredient">cheese slices, as much as you like</li>
<li class="ingredient">butter, for greasing</li>
</ul>
<h2>Instructions</h2>
<ol class="instructions">
<li class="instruction">Grease the bottom and sides of four ramekins (one cup capacity). Divide the bread (or rice) among them, pressing down to make the bread (or rice) compact.</li>
<li class="instruction">Crumble the longganisa meat and cook, with no added oil, in a non-stick pan. When the meat changes color, add the mushrooms. Cook, stirring, for about 30 seconds. Add the sliced onion and cook for another 30 seconds. Add the sliced spinach. Cook over high heat until the mixture is almost dry, about five minutes. Adding salt and pepper is optional since the longganisa meat is already very highly seasoned.</li>
<li class="instruction">Divide the mixture among the four ramekins. Crack an egg over each and top with cheese slices (I used Monterey Jack but I bet that local kesong puti would be even better). Bake in a 425ÂºF oven for seven to ten minutes or just until the egg whites are set but the yolks are still soft. The cheese would be melted by that time. Serve at once.</li>

<li class="ingredient">8 eggs beaten</li>

<h2>Instructions</h2>

<li class="instruction">Heat oil and brown the garlic. </li>
<li class="instruction">Add onions, bacon, tomatoes and green bell pepper.</li>
<li class="instruction">Season to taste and cook until tender.</li>
<li class="instruction">Remove from pan and set aside.</li>
<li class="instruction">In the same skillet, heat butter.</li>
<li class="instruction">Pour in half of the beaten eggs. </li>
<li class="instruction">Allow to set then tilt pan from side to side to allow liquid egg on top to flow along the sides.</li>
<li class="instruction">When lightly set, slide on to a serving plate. Do not fold.</li>
<li class="instruction">Top with half of the very hot vegetable mixture.</li>
<li class="instruction">Repeat with the rest of the eggs and vegetable mixture.</li>

<li class="ingredient">6-8 cups water (more or less depending on your preferred consistency)</li>
<li class="ingredient">1 cup white sugar</li>
<li class="ingredient">1/2 cup unsweetened cocoa</li>
<li class="ingredient">evaporated milk (optional)</li>
</ul>
<h2>Instructions</h2>
<ol class="instructions">
<li class="instruction">Mix all ingredients together (except milk) in a large pan. Cover.</li>
<li class="instruction">Put on high heat until boiling for 3 minutes. Mix.</li>
<li class="instruction">Put on low heat for 30-40 minutes (still covered). Mix often to prevent sticking. Add more water of you want it more thin.</li>
<li class="instruction">Serve hot with a swirl (or a cup!) of evaporated milk on top! Enjoy!</li>

<li class="instruction">Spray the baking sheets or a tray pan with non-stick cooking spray or butter.</li>
<li class="instruction">Preheat oven to 375°F.</li>
<li class="instruction">When the dough is ready, cut it into small amount and roll in bread crumbs an in oval shape and place on a baking sheet or tray.</li>

<li class="instruction">Grease cake pan with butter and pour in mixture. Top with coconut cream and 3/4 cup brwon sugar. Sprinkle with anise seeds. Bake for 20 minutes.</li>
