Beef Salpicado with Garlic Rice

Ingredients

  • 1 kilo beef tenderloin
  • 1 1/2 heads garlic, crushed (reserved half)
  • 2-3 tablespoons liquid seasoning
  • 1/2 cup olive oil, divided
  • salt and pepper
  • 5 cups cooked white rice

Instructions

  1. Cut beef into 2 inch cubes. In a medium bowl, mix half of the crushed garlic and liquid seasoning. Add beef and mix well. Set aside to marinate for 10 minutes.
  2. Meanwhile, heat half of the olive oil and fry remaining garlic until golden brown and crispy. Remove from pan and reserve oil.
  3. In same pan, reheat oil and stir fry the beef until of desired doneness (about 1 1/2 minutes for rare, 4 minutes for medium) Season with salt and pepper. Placed cooked beef on a serving plate. Sprinkle with fried garlic. Set aside.
  4. Scrape off any sediment from the skillet. Pour remaining 1/4 cup oil into skillet and heat until hot. Add rice and stir fry until rice is lightly browned. Season with salt and pepper if desired. Transfer to a serving platter. Serve with the beef
